85 year old vineyards with an average altitude of 650m with granite and clay soils. Mixture of red and white varieties such as Grand Noir, Trincadeira, Aragonez, Castelão in reds and Arinto and Tamarez in whites. Maceration with stainless steel stalks for 2 months. Gently pressed and aged in French oak barrels for 8 months. 2 years in bottle before being sold.
Dominó Sãlao Frió comes from vineyards in the town of Salão Frio (Alto Alentejo), in the middle of some hills. These are old vines planted in clay and granite soils and lying more than 700 metres above sea level. The area has a continental climate and is very cold. They use organic agriculture and the harvest is manual with the grapes selected in the vineyard itself.
Domino Sãlao Frió has a completely different profile compared to traditional Alentejo wines. This is a dry, fresh, low-alcohol wine that will leave you wanting more.
