Wine produced from grapes previously de-stemmed, are mechanically pressed with separation of the must into fractions. Alcoholic fermentation incomplete, with indigenous yeasts, in stainless steel tanks
room temperature. Bottling, with refermentation, no added yeast or sugars. does not pass through “dégourgement” process, keeping permanent presence of yeasts inside the bottle.
